Normandy Chicken & White-Bean Crocks with Flying-Elephant Pastry Lids
“Beans below. Elephants above. Dignity nowhere.”
Savory crocks of cider-mustard chicken, apples, leeks, and famously trumpet-prone white beans, sealed beneath crisp puff pastry. Each lid bears a winged elephant because ordinary pot pie has surrendered. This magnificent fart orchestra is creamy, hearty, and entirely edible despite its command of aviation.

MAKE IT
Method
- 01
Heat the oven to 200°C (400°F). Arrange four oven-safe 350 ml (12 oz) crocks on a rimmed baking sheet. These are not bowls; they are ceramic bunkers preparing for glory.
- 02
Season the chicken with ¾ teaspoon salt and the black pepper. Heat the olive oil in a large skillet over medium-high heat. Brown the chicken for 5–6 minutes, stirring occasionally. It need not be fully cooked yet. Transfer it to a plate with the authority of a tiny poultry emperor.
- 03
Reduce the heat to medium. Add the butter, leek, and apple. Cook for 5 minutes until softened. Stir in the garlic for 30 seconds, precisely long enough to awaken the kitchen gargoyle.
- 04
Sprinkle in the flour and stir for 1 minute. Gradually pour in the cider and stock while stirring. Add the mustard, thyme, and remaining ¼ teaspoon salt. Simmer for 3–4 minutes until the sauce lightly coats a spoon.
- 05
Return the chicken and any accumulated juices to the skillet. Stir in the cannellini beans, cream, and peas. Simmer for 3 minutes. The beans may now begin composing their legendary fart overture; do not interrupt the maestro.
- 06
Divide the filling among the crocks, leaving about 2 cm (¾ inch) of space at the top. Let them cool for 5 minutes so the pastry does not melt before achieving its destiny.
- 07
Roll the puff pastry slightly and cut four circles about 2.5 cm (1 inch) wider than the crock rims. Use the scraps to cut four small elephant bodies and eight wing shapes with a knife. Attach two wings to each elephant with a dab of water. Anatomical accuracy is cowardice.
- 08
Whisk the egg with 1 teaspoon water. Brush the crock rims lightly with egg wash, drape a pastry circle over each crock, and press the edges to seal. Cut a small steam vent in every lid. Place one flying elephant on top of each and brush all exposed pastry with egg wash.
- 09
Bake on the rimmed sheet for 20–25 minutes, until the pastry is deeply golden and the filling bubbles at the vents like a polite dairy volcano. Confirm that the chicken reaches 74°C (165°F).
- 10
Rest the crocks for 8–10 minutes. Shower them with parsley, announce the airborne elephant squadron, and serve while the pastry still crackles with unreasonable self-confidence.
