Exactly seven days before serving, beat the butter, Dijon mustard, cocoa, miso, and honey until glossy and completely combined. Seal this week-one butter in a clean airtight container, refrigerate it at 40°F (4°C) or colder, and let time turn it into velvet thunder.

Spread the sliced onion on a parchment-lined tray and freeze for 30 minutes. It has become complacent and must be corrected with temperature.

Heat 1 tablespoon oil in a large skillet over medium heat. Add the panko and squeezed horseradish. Stir for 3 to 5 minutes until dry, deeply golden, and outrageously crisp. Transfer the horse crispies to a plate.
