Gilded Stable Chicken with Crispy Potato Horseshoes

“Saddle the crunch. Unleash the butter.”

Golden mustard-crusted chicken charges onto the plate beside thunderously crisp potato horseshoes, a tangle of stripped seasonal vegetables, and herb butter aged in the refrigerator for up to one majestic week. It is less a dinner than a cavalry parade conducted by a saucepan.

MAKE IT

Method

  1. 01

Create the One-Week Throne Butter: combine the softened butter, parsley, chives, lemon zest, garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Roll it into a log in parchment, twist the ends like an extremely wealthy candy wrapper, and refrigerate until firm. It may be made up to 1 week ahead; the butter now has seniority over everyone in the kitchen.

  2. 02

Heat the oven to 220°C (425°F). Line a large sheet pan with parchment. No speeches from the oven—it knows why it is here.

  3. 03

Cut the potatoes lengthwise into 1 cm-thick slabs, then cut each slab into crude horseshoe shapes. Perfection is forbidden; every stable has one horse that looks like a sofa. Toss with 2 tablespoons olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper.

  4. 04

Arrange the potato horseshoes on the sheet pan without overlapping. Roast for 30–35 minutes, flipping after 20 minutes, until deeply golden and crisp enough to make a tiny galloping noise when tapped.

  5. 05

Place each chicken breast between sheets of parchment and pound to an even 1.5 cm thickness. This is not aggression. This is architectural correction.

  6. 06

Whisk the Dijon mustard and egg together in a shallow bowl. Put the flour in a second bowl. In a third bowl, combine the panko, smoked paprika, 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper.

  7. 07

Coat each chicken breast first in flour, then in the mustard-egg mixture, and finally in panko. Press firmly so the crumbs understand that desertion is not an option.

  8. 08

Heat 2 tablespoons olive oil in a large skillet over medium heat. Cook the chicken in batches for 4–5 minutes per side, adding a little more oil if needed, until the coating is bronze and the center reaches 74°C (165°F). Transfer to a clean plate and crown each piece with a slice of cold herb butter.

  9. 09

Use a vegetable peeler to strip the carrots and zucchini into long ribbons. Trim the asparagus and shave it into ribbons as well, stopping before your fingers become part of the seasonal collection.

  10. 10

Whisk the remaining 1 tablespoon olive oil with the lemon juice, honey, and a small pinch of salt. Toss with the vegetable ribbons and dill immediately before serving. This is the Seasonal Stripper: elegant, brightly dressed, and arriving exactly when the potatoes begin demanding applause.

  11. 11

Plate one chicken breast with crispy potato horseshoes and a dramatic coil of vegetable ribbons. Allow the melting herb butter to advance across the chicken like a luxurious green weather system. Serve immediately and accept whatever imaginary culinary medals appear.
