Black-Garlic Turkey Dinosaurs with Parmesan Pipe Pasta

“Jurassic glamour, garage-floor shine.”

Tender turkey dinosaurs stampede across creamy rigatoni “PVC pipes” beneath an edible black-garlic “car oil” glaze. No hardware-store plumbing or automotive fluids enter the kingdom; the magnificent industrial illusion is built entirely from ordinary food.

MAKE IT

Method

  1. 01

Heat the oven to 425°F and line a sheet pan with parchment. This is now the official dinosaur runway; all lesser baking trays must bow.

  2. 02

Combine the turkey, breadcrumbs, 1/4 cup Parmesan, egg, garlic powder, oregano, 3/4 teaspoon salt, and 1/4 teaspoon pepper. Mix only until combined, because even prehistoric poultry deserves boundaries.

  3. 03

Divide the mixture into eight portions. On the prepared pan, flatten each into a 1/2-inch-thick oval, then pinch out a head, tail, and two deeply authoritative legs. Anatomical accuracy is forbidden; confidence is the only fossil record that matters.

  4. 04

Brush the turkey dinosaurs with 1 tablespoon olive oil. Bake for 16 to 20 minutes, until browned and the centers reach 165°F. Do not negotiate with them, regardless of rank or tiny turkey arms.

  5. 05

Meanwhile, boil the rigatoni in salted water according to the package directions until al dente. Reserve 1/2 cup pasta water, then drain. The rigatoni are edible PVC pipes now. Do not call a plumber; plumbers fear béchamel.

  6. 06

Melt the butter in a large skillet over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the milk, then simmer for 3 to 5 minutes until thickened enough to coat a spoon like a luxurious winter jacket.

  7. 07

Stir 1/2 cup Parmesan, the remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper into the sauce. Add the rigatoni and peas, tossing until every pipe is fully certified by the Department of Sauce. Loosen with reserved pasta water as needed.

  8. 08

For the edible car-oil glaze, whisk the mashed black garlic, balsamic vinegar, soy sauce, molasses, water, and remaining 1 tablespoon olive oil in a small saucepan. Simmer over medium-low heat for 3 to 4 minutes, whisking until glossy and ominously magnificent.

  9. 09

Divide the creamy pipe pasta among four plates. Position two turkey dinosaurs on each serving as though they have just conquered a dairy volcano. Drizzle with the black-garlic glaze and scatter parsley over everything like tiny ceremonial shrubbery.

  10. 10

Serve immediately, preferably with a solemn announcement that the Mesozoic parking garage is finally open for dinner.
